It’s gotta be Irish coffee and “High Spirits” for St. Patrick’s Day this year, and pretty much every year, and possibly every holiday. I guess my version is technically “Irish-American Coffee” because I only have bourbon in the house and I’m a proponent of using what you have (and I just so happened to have a pretty decent Four Roses bourbon on hand, so don’t mind if I do.)

You need:
6 ounces of coffee (I used decaf, otherwise I will be awake until next Tuesday)
1.5 ounces Irish Whiskey, like Jameson’s (Or use bourbon and call it an Irish-American Coffee)
1 ounce-ish of Bailey’s Irish cream
Whipped cream, the canned stuff will work too.

Build your Irish coffee by pouring about 6 ounces of hot coffee into a cup. Add the whiskey and stir, then drizzle in the Irish cream, but leave enough room on top for the whip. Then grab your cup with both hands and settle in to watch “High Spirits,” from 1988 starring Steve Gutenberg, Daryl Hannah, Beverly D’Angelo, Liam Neeson, and Peter O’Toole.
